Q: What Motivated Soulfly Chicken to choose Wynwood as the location? What made it an attractive destination for your brand?
A: Coming to Wynwood was an idea I had about 4 years ago. Seeing how the neighborhood has transformed into an artsy, hip, foodie neighborhood, I just knew I wanted to be a part of it. Back then, I wasn’t sure what kind of concept or how it would fit, but I knew this was where I needed to be.

Q: What are some of your favorite, special items that you sell?
A: To be honest, I have several favorites including the Mac & Cheese, Collard Greens, Banana Pudding, and Peach Cobbler Milkshake.

Q: The addition of a food truck is an exciting venture for Soulfly. How does the food truck experience differ from the brick-and-mortar location?
A: Initially, the food truck served as a tool to create awareness around the store. We made ourselves a part of Miami-based events, catering, and rallies, and that’s how we built our clientele in the beginning. Since opening the brick-and-mortar store in May, we now only use the food truck for events and catering.

Q: How is Soulfly different from other “Chicken” establishments?
A: What sets us apart from the rest is we use technology to cook our food. Our fryers use 40% less oil and calories, resulting in a healthier dining option that isn’t overly salted or greasy. In addition to our cooking methods, we are a unique shop. When you come into Soulfly, you’ll notice we have a locker system and a kiosk where you order your food. Embracing the trend of fast and contactless service, we’ve received a positive response to our convenient and efficient pickup process.

Q: As a chef, what do you think sets a chicken dish apart, and how do you ensure quality is consistently maintained at Soulfly?
A: I believe it is important to understand where your product is coming from and foster relationships with the farms that supply them. I have personally visited the farms to make sure what I’m delivering to my customers is top quality. This includes the chickens’ diet, and I’ve seen how the lettuce is grown and know exactly what the chickens are being fed.  I recognize that in larger chains and establishments, these details can often be overlooked, and I was determined not to overlook this part of the process.
