Q: How would you describe the food that’s served at Ossobuco?
A: The food at Ossobuco is deeply inspired by my roots. I grew up on a farm in a very small town in Argentina. We would eat what the land provided, so at the restaurant, we prioritize working with local farmers and seasonal vegetables, ensuring freshness and quality in every dish. We also have an incredible dry-aged program for meats and fish. Really, our emphasis is based around the wood-fired dishes and providing a memorable experience to our customers.
Q: Why was Wynwood the perfect destination for a restaurant like this?
A: We came to Wynwood because we saw the potential and believed that the neighborhood needed a high-level restaurant, so we wanted to come here and put our footprint into the community before everyone else. Many different cultures are coming together in Wynwood just like our restaurant.
Q: What makes wood-fired cuisine so different from other cooking methods?
A: The reason we use a lot of wood smoke is because of my Argentine culture. I like to gently infuse the meat and vegetables with smoke to enhance the flavor. It adds a unique dimension to the dishes – something different to the traditional cuisines.
Q: Your expansive wine menu and creative cocktails have become a staple of Ossobuco. Tell us about it.
A: Our cocktail program is truly exceptional and reflects a modern approach to mixology. Like our kitchen, we create everything in-house, crafting our own mixers and sodas. This dedication to quality and creativity means a lot of effort goes into every drink we serve, making our bar an integral part of the Ossobuco experience.
Q: The restaurant was recognized in the 2024 Michelin Guide, what separates Ossobuco as a premier dining establishment?
A: We are incredibly happy and proud to be part of the Michelin Guide, especially as a young and new restaurant. This recognition validates our commitment to excellence and reflects the hard work and passion of our team at Ossobuco.
Q: What’s next for Ossobuco?
A: We’re excited about the future. We are going to continue working hard and make sure we accomplish all the goals we have. We are looking forward to opening another restaurant in Coconut Grove.
