Tell us a bit about your business – the concept, what you sell and what makes you unique.

We are a small shared plate concept with cuisines and techniques from all over the world. We do not like to limit ourselves in what we can offer our guests. The bar focuses on offering high quality cocktails and a comprehensive variety of wine and beer. We want to make sure that anybody who walks into this building thoroughly enjoys their experience.
Why did you choose to open your business in Wynwood, as opposed to another Miami neighborhood?
Wynwood is the most creative and diverse neighborhood in Miami. The district is dynamic and constantly evolving, and we wanted to contribute to its growth.

What does a typical day at Beaker & Gray look like?
Our head prep cook usually arrives around 5am to start preparing for each day’s service. At around 9am the rest of the kitchen staff trickles in followed by bartenders and bar prep staff and finally the servers. Service begins at either 11am or 12pm depending on the day, and we essentially spend the whole day skipping back and forth between prep-work and service in all departments, carefully navigating each pop (Lunch/Brunch, Dinner and Late night). Once our kitchen closes at 1am on the weekdays, the bar stays open to welcome latenight patrons and the restaurant becomes more of a bar. The bartenders usually get out around 3 or 4am, leaving the restaurant empty for a couple of hours before the cleaning crew and prep cook arrives again.
