Q: With such an unusual career path, what made you want to start your own bakery?
A: Food in general has always been a big deal in the firehouse, for example you hear about storied and famous firehouse chefs, and I felt like I had that desire and creativity. I often say, ‘Screw it, and go do it!’ Over time, I built up the confidence to take the leap. I spent 10 years with the fire department and I learned a lot, but eventually I realized I wanted to pursue my own path – and I knew I had really great products to offer.
Q: Where did you learn to bake?
A: I started baking at the age of 13 as a self-taught baker. My journey began with perfecting a key lime pie recipe, which I made repeatedly until it was just right. Over time, I expanded my skills and developed many of the items you see on the menu today.
Q: How do you ensure your desserts are always fresh and delicious?
A: All of our recipes have been developed over the years with consistency as our top priority. We ensure that each item tastes the same from the first time to the last. I’m a big believer in maintaining consistency and uncompromised quality. After years of experience, we have a clear understanding of how our products should look and taste. Plus, technology today helps us with quality control.
Q: What are some similarities between firefighting and baking?
A: The fire department instilled in me discipline and structure, which directly translates to running a business. In both fields, there’s no backup—it’s all on you to make things happen. Baking involves many moving parts, just like a firehouse, and it’s crucial to delegate and place people in the right roles to succeed. Just as you have firefighters, lieutenants and captains, in a business you have store clerks, managers and district managers. The parallels are clear, and my experience in the fire department taught me how to apply that structure effectively.
Q: Why was Wynwood the perfect destination for your business?
A: I started out in Wynwood in 2010, working in a commissary kitchen literally across the street. At that time, we were among the few businesses in the area. As the neighborhood started to develop, we had a front-row seat to its transformation. Eventually, I found a spot I really liked and decided it was the perfect place to be. This month, we actually celebrated our 10-year anniversary of being open in Wynwood.
